Frisella Project started off as a simple way to connect recipes such as the southern Italian Frisella, a dry bread used in summer with salads, and the similarly used Greek Paximathia. This research led to the creation of a pop-up food and conversation stall, a place where to trace, together with others, the history of frisella and related recipes, uncovering hundreds of linked stories, ingredients and recipes that make this simple dish and its variation a shared matter all over the Mediterranean and across Europe. This stall was presented during the 2023 Dutch Design Week edition along with other projects showcased in Sectie-c, a special exhibition venue in Eindhoven,the Netherlands.
